- 1/2 cup water
- 1 cup ice cubes
- 1 cup fresh pineapple chunks (fresh or canned)
- 2 Tbsp. brown sugar
- 10 chunks pineapple (roasted)
- 2 oz. simple syrup (brown sugar)
- 8 mint leaves
- 2 oz. rum (Pineapple, see notes)
- crushed ice (I put ice into a large ziploc bag, covered it with a dish towel and banged it with the smooth side of a meat mallet)
