- 1 spear asparagus
- 4 sweet mini peppers
- 2 cloves garlic (chopped)
- 1 slice onion
- 1 tsp. olive oil
- seasoning
- freshly ground pepper
- spring greens
- spinach
- romaine
- 10 cherry tomatoes (sweet, halved)
- 1/2 cup cooked chicken (chopped, optional ... I've made this salad both with and without the meat. This time, I used some of my Harissa Moroccan chicken. I think it would work well with cooked salmon or tuna in place of the chicken too.)
- 1/2 avocado (a small, ripe, chopped into chunks)
- 6 cubes feta (marinated, recipe here or regular feta cheese, crumbled)
- ranch salad dressing (Sriracha Yogurt, recipe here ... or other dressing of choice)
