- 1 tsp. vegetable oil
- 85 grams shallots (about 3-4 medium coarsely chopped)
- 3 cloves garlic (crushed)
- 1/2 cup shredded coconut (unsweetened)
- 1 tsp. toor dal
- 1/2 tsp. urad dal
- 1 tsp. rice (any variety, but I used basmati)
- 1 tsp. coriander seeds
- 1/2 tsp. cumin seeds
- 1/4 tsp. fennel seeds
- 3 dried chili peppers (small)
- 1/4 tsp. canela (optional)
- 1/2 tsp. ground turmeric
- 1/2 tsp. amchoor (dried mango powder, optional)
- 1/2 tsp. sugar (preferably palm sugar, jaggery)
- salt (to taste)
- 2 Tbsp. vegetable oil
- 1 tsp. black mustard seeds
- 1/2 tsp. fenugreek seed
- curry leaves (optional)
