- 2 cloves garlic (crushed)
- 25 grams butter
- 10 dates (chopped)
- 1 cup red quinoa (cooked)

- 1 Tbsp. chopped coriander (finely, stem and leaves)
- 2 tsp. seasoning (Moroccan spice)

- 1/4 lemon zest (and juice)

- 2 bunches carrots (Baby, dutch)
- mint sauce
- 5 sprigs fresh mint leaves
- 1 sugar (dessert spoon rapadura)
- 2 boiling water (dessert spoon)
- 4 apple cider vinegar (dessert spoon)
