- 1 Tbsp. ghee (or coconut oil)
- 1 shallot (chopped)
- 3 garlic cloves (rough chopped)
- 1 Tbsp. ginger (finely chopped)
- 1/2 tsp. turmeric
- 1/2 tsp. fennel seed
- 1/2 tsp. mustard seed
- 1 1/2 cups diced tomatoes (about 2 medium tomatoes)
- 1 can coconut milk
- 1 tsp. fenugreek leaves (– optional, but delicious!)
- 1 tsp. salt
- 1 tsp. brown sugar (or honey)
- cilantro (optional)
- fennel seeds (optional)
- chili flakes (optional)
