- 1/2 cup chopped fresh cilantro (divided, plus more for garnish)
- 1 1/2 tsp. salt
- 1 tsp. dried oregano
- 3 cups chicken stock (homemade or store-bought)
- 4 boneless skinless chicken thighs (thinly sliced)
- 15 oz. hominy (drained and rinsed)
- 1/2 avocado (diced, for garnish, optional)
- 1 watermelon radish (cut into matchsticks, for garnish, optional)
