The texture and overall flavor is good, but cooking garlic and parmesan for that long just burns them. I was worried about it before I even started, so I only had my oven at 400F, and the toppings still burned. I love buttery roasted carrots, so I'll do something similar again but probably wait until the last 5 minutes or so before tossing in the garlic and parmesan.
