I added chick peas to this and added an Indian spice blend to it as well. It turned out great and is even good cold.

Very good! My husband and I make this all the time now! Goat cheese also goes well in lieu of feta cheese.

Love love love this! I followed the instructions and it came out great. For those that say it came out soggy, I squeezed the excess liquid from the spinach after blanching it. I've also made this using curly kale and it came out good too although the kale was chewy but I didn't mind that at all. Great as an appetizer or as a meal, I just added some olives and cherry tomatoes

Definitely a new favorite side dish. The only changes are that I used 1 cup of quinoa, a little more spinach, reduced fat feta, and garlic powder and garlic salt instead of fresh garlic. Turned out great and makes enough for multiple people and leftovers.

Loved this recipe! I used Nero Di Toscana Kale instead of spinach and only 1/2 cup of quinoa. So delicious! Ill be making this again. My fiance was even licking the plate...no joke!

I probably got a little carried away with the feta. Also my first time using quinoa, would have been handy to include the cooking time of that in the directions as I forgot and it threw my timing off a bit. Tasted great though, even the kids ate it!
