My mom loves eggplants. I made this for her she was surprised by balsamic. She's made it like two more times after that!

Was worried because 2tbsp seemed like a lot for the recipe but you were so right. The eggplants are just like sponges. I reckon I could even do 3tbsp and it would be fine
