Basic recipe but so easy and yummy! I chopped some fresh garlic and roasted it with the eggplant. Made double recipe to toss with pasta for another night

Added the delicious eggplant to sautéed onions, fresh tomatoes, garlic and tossed it with bow tie pasta

Really delicious- not mushy or over cooked. Took the dish to a potluck where it was enjoyed even by folks who didn’t eat eggplant.

I love eggplant and I make this at least once a week. I leave the skin on and I do not draw moisture out with salt before. It comes out so delicious and I get tons of questions and compliments when I serve to guests. Yummy

I didn't use the oven (just top burners) and added other vegetables. Turned out great!
