I enjoy putting my own spin on everything I cook, so I used this as a guide and loosely followed it. It really came out deLISH! I gave it four stars, because I felt the recipe's original cooking time would have come up short. I turned off the oven at 35 mins and let it stay in the oven another 5-ish mins.
My variations and additions: I oiled the foil-lined roasting pan with a lemon-herb finishing butter. I didn't adhere to any measurements in terms of olive oil, seasoning, etc. I chopped one roasting potato, some baby carrots and half a red onion and lined the pan with that. I also mixed them in the olive oil marinade, then placed the marinated chicken on top. Right before I popped the pan in the oven, I drizzled some naranja marinade over the chicken pieces. (Naranja sauce can be purchased in the Spanish section of the supermarket.)
