Wow! Yum just yum. We usually do a stove top curry but I didn’t feel like monitoring the stove tonight. This was great. I used one sweet potato with a couple of russets. The sweet potato is nice treat. Next time I’ll add a bit of the normal veg we add (onions, carrot, apple) but that’s just preference definitely not needed. The skin on the chicken gets deliciously crispy and browned. Super amazing!
