- 1 avocado (ripe, peeled, pitted and thinly sliced)
- 1/2 red onion (small, thinly sliced)
- 1/3 cup toasted pine nuts
- 1 batch dressing (Dreamy Tahini )
- lemon slices (optional: extra, /wedges for serving)
- 1 head cauliflower (cut into small florets)
- 2 Tbsp. olive oil (divided)
- 15 oz. chickpeas (rinsed and drained , a.k.a. garbanzo beans)
- 1/2 tsp. ground cumin (each , + garlic powder + smoked paprika)
- 1/4 tsp. onion powder
- 1 pinch cayenne pepper ( , or more/less to taste*)
- kosher salt
- cracked black pepper
- 1/4 cup tahini
- 3 Tbsp. lemon juice ( freshly-squeezed)
- 2 cloves garlic (pressed or minced)
- 1 Tbsp. maple syrup

Fresh, light, summer lunch! Very easy to put together. Only changes made were that the cauliflower/ chickpeas cooked in 12 minutes and I found the chickpeas could have used more spice even though quite a bit was already added. Delicious and satisfying! Definitely will make again!
