- 1/2 cauliflower (medium, cut into small florets)
- 1 lemon
- ground black pepper
- fine sea salt
- extra-virgin olive oil
- 1 1/2 cups chickpeas (cooked, or use 1x400g tin chickpeas, rinsed well, patted dry on a clean tea towel)
- 1 tsp. fennel seeds (cumin seeds would also work here if that's what you have)
- 1 cup cooked quinoa (*, any colour)
- 1/4 cup toasted almonds (roughly chopped)
- coriander
- flat leaf parsley
- fresh mint leaves
- lime dressing (jalapeno)
- 2 pickled jalapenos (finely chopped)
- 2 limes (medium)
- 3 Tbsp. extra-virgin olive oil
- 2 Tbsp. chives (finely chopped)
- ground black pepper
- fine sea salt
