  • 1 red bell pepper (stem and seeds cut out and cut into 1/2 inch dice)
  • 2 tablespoons olive oil
  • salt
  • ground black pepper
  • 3 tablespoons pine nuts (slivered almonds would also be nice if you don't want to buy pine nuts)
  • 2/3 cup sliced green olives
  • 2 tablespoons capers
  • 2 tablespoons flat leaf parsley (chopped, completely optional, but if you have some it adds some nice green color)
