    I added 2 vegan fieldroast sausages. I will add thyme next time.

    Thyme gives it good flavor. Going to add lemon zest and a little lemon juice next time. I cut down the baking time from 40 to 30 and put it under a hi broil for a couple of min.

    Still working through the Thanksgiving leftovers on Saturday. This is a great setup for anything in your produce drawer that needs to be used— the texture from the cauliflower and mushrooms are so good. You can be more heavy-handed and diverse with seasoning than the recipe indicates. Have fun!

    Good recipe, IDK, it was just a bit lacking, or bland...not sure what I was expecting, but it didn't "Wow" me. That being said, a few days later I threw the leftover casserole in some cauliflower soup, and man oh man, that combination of casserole & soup was amazing.

    Made as directed plus added sage flavored sausage and a light sprinkling of breadcrumbs on top. My husband went back for thirds. It was that good!
