    I added some crushed cashews and finely chopped mushrooms at the 20min mark. The cashews really added a new flavour to it, and I loved the taste with cilantro and lime. Definitely going to make it again!

    I used frozen cauliflower so I didn't drizzle oil prior to baking but it turned out well.

    OMG, so delish! Love the line cilantro taste. No salt needed. It was perfect. May have roasted a bit too much but gave it a great flavor.

    Followed the recipe and it was way too much lime flavor for my taste. Made a second batch of cauliflower to lessen the lime juice. I did like the cilantro and cumin. Will try again but maybe with diff acid...Lemon or orange zest.

    AMAZING! Roasting the cauliflower gave a nice crust and crunch. Usually, my rice is soggy but this was GREAT!

    I've made cauliflower rice before, but it didn't taste as good as this recipe with the cilantro. I roasted the rice for 30 minutes and I added some diced onion to the 'rice' before I put it in the oven. This is a sensational way to prepare the 'rice'.

    I really liked the taste. I only put one lime instead of two. I put more cilantro than the recipe said. I also added red peppers to get more of a kick out of it. I would recommend putting in the oven for 30 minutes.

    We love this rice. Easy to do and tastes great, especially when you let it get a bit crunchy in the oven.
