    This came out good with modifications! There is no need for 8 oz of mac when you’re using an entire head of cauliflower... so I cut it down to 4 oz. I used a mix of cheddar and smoked Gouda, and seasoned the cauliflower with cayenne & paprika. Next time I will add MORE seasoning to the cauli and top with panko before baking, and maybe a spicier cheese!
