I used 1 T of kosher salt as per the recipe and it was way too much. The carrots were so salty that they were inedible. We threw them out. I want to try it again with 1 tsp salt tops or maybe just use the herbs for seasoning. I also roasted the carrots at 400 degrees not 425 and the carrots were tender after 30 minutes.

Softer & tastier than expected. I must have sliced the carrots so I only baked it for 15mins

I personally thought these carrots were delicious. They were tender but firm and had such a sweet and savory flavor. These have become one of the staple ways to make carrots for me.
