- 6 Tbsp. unsalted butter
- 3 cups onions (chopped, about 1 pound)
- 2 cups chopped celery (4 to 5 stalks)
- 1 1/2 cups fennel bulb (coarsely chopped fresh, just the white part)
- 1 lb. pork sausage
- 1/4 cup Italian parsley (chopped fresh)
- 2 Tbsp. chopped fresh sage
- 2 Tbsp. fresh marjoram (chopped)
- 12 cups ciabatta bread (or, generous 1-inch cubes day-old pain rustique, with crust, about 1 1/4 pounds)
- 2 large eggs
- 1 1/2 tsp. fine sea salt
- 1 tsp. coarsely ground black pepper
- 1 cup swanson chicken broth (or more low-sodium, I used 1/2 cup chicken broth, 1/2 cup white wine)
