- 1 butternut squash (small, peeled and cubed into 1 inch cubes, about 6 cups)
- 2 Tbsp. olive oil
- 1 1/2 tsp. spice blend (Garam masala)
- 1/2 tsp. salt
- 1 can chickpeas (drained, or sub 1 lb boneless chicken thighs cut into bite-sized pieces, optional)
- 1/4 cup ginger (sliced)
- 1/4 cup garlic (10 cloves)
- 4 serrano chilies (fresh, cut in half lengthwise)
- 4 Tbsp. olive oil (or ghee)
- 2 Tbsp. tomato paste
- 1 tsp. garam masala (see below)
- 1 tsp. canela
- 1 tsp. paprika
- 8 Roma tomatoes (rough chopped, sauce will be blended)
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 cups water
- 3/4 cup plain yogurt (or 1 can coconut milk, or ½ Cup Cream)
- 1 Tbsp. fenugreek leaves (dried, optional)
- 1/4 cup chopped cilantro (for garnish, optional)
- basmati rice (Serve with, or naan bread)

Fantastic recipe. I used chickpeas instead of chicken. I had frozen butternut squash and that didn’t work well with this recipe. It turned into mush after baking it.
