  • 2 pounds butternut squash (cubes, about 6 cups)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar (best quality)
  • 1 teaspoon rosemary (very finely chopped fresh or frozen, or slightly less dried rosemary, be sure it’s especially finely chopped if you use dried rosemary)

    Good, standby squash recipe. I think it's best to make sure the pieces are chopped small and they are cooked thoroughly before taking out, some of the larger chunks were a bit undercooked for me.

    This was delicious! Will make again. The only thing I did differently was to omit the balsamic vinegar after the butternut squash was done.

    I am still learning to like squash so bear that in mind when you see my rating. This is a good, basic recipe made with leftover squash and other ingredients that I already had on-hand. I will definitely cook this again.
