    I should have followed the instructions more carefully. I feel ok about where I landed. But, I think greatness is in there someplace. The elements of this recipe are so very simple and so promising, I wish I'd paid better attention.

    It's astonishing how delicious the combo of lime juice and butternut squash is. I would have never thought to pair them up. While I'm all for "sweet" butternut squash with honey and cinnamon, I think this will be my go-to savory preparation. I intended to leave enough to eat it tomorrow, and I ended up eating the whole thing.

    I made this for a FriendsGiving party that I hosted and everyone seemed to like it! It was quick and easy. But it would have been so much better if I could have added in the gorganzola!

    Delicious delicious dinner dish. I had a craving for butternut squash but never cooked it before. Turned out to be quite challenging to cut it (sturdy thing!), but once done it was quite simple to clean and chop. I added some organic honey - a tablespoon of it - turned out great. To go with it, I fried some calamari just before the squash was done, super easy: cut it into pieces, toss in a frying pan with some olive oil, optional additions - garlic, ginger, honey; cook just until opaque. Yumm!

    Super super yummy! I was indifferent to butternut squash before. I didn't hate it I just didn't know how to make it taste good. This takes time to bake but preparation is SO EASY! I'm going to try these with my kids!
