I added a little more chicken broth. Perhaps my squash was extra large? We loved it

Great! I did use garlic infused olive oil, 2 extra celery stalks, & 4 medium carrots to add extra veggies and it was perfect!

This soup tasted delicious and hearty. The green apples and carrots gave it a natural sweetness without any added sugar. I substituted chicken broth for vegetable broth and skipped the ghee and it still tasted great.

I love a great paleo recipe! This is soup is fragrant, hearty and delicious. And those winter vegetables and spices smell great roasting in the oven!
