- 1 butternut squash (large, cut into 3/4 by 2 1/2 inch wedges)

- 2 red onions (large, cut into 1 1/2 inch wedges)
- 3 1/2 Tbsp. olive oil
- 3 1/2 Tbsp. tahini paste
- 1 1/2 Tbsp. fresh lemon juice
- 2 Tbsp. water (plus more if needed)
- 1 garlic (glove, minced)
- 3 1/2 Tbsp. pine nuts (don’t skip the pine nuts – they are great in this dish)
- 1 Tbsp. za'atar (I used a combination of thyme, salt and toasted sesame seeds)
- 1 Tbsp. chopped parsley
- sea salt
- freshly ground pepper
- 1 Tbsp. honey (not in original recipe)
