  • 2 pounds brussels sprouts
  • 1 tablespoon extra-virgin olive oil
  • salt
  • 1 1/3 cups fresh cranberries
  • 2/3 cup toasted pecans
  • 1/2 cup gorgonzola cheese
  • 2 tablespoons pure maple syrup
  • 2 tablespoons balsamic vinegar

    Directions

    1. Preheat oven to 400 degrees.
    2. Cut brussels sprouts in half and toss lightly in just enough olive oil to coat them and season with salt and pepper. Roast brussels cut side down for about 10 minutes.
    3. After brussels have started roasting, add in fresh cranberries and roast for another 10-15 minutes.
