- 1 cup quinoa (uncooked, cooked)
- 3 Tbsp. olive oil (good)
- 1 lemon (juiced)
- 1/2 tsp. kosher salt
- 1/2 tsp. fresh ground black pepper
- 1 pinch cayenne pepper
- 1 cup fresh parsley (chopped)
- 5 green onions (chopped)
- 1 English cucumber (peeled and chopped into 1/2 inch pieces)
- 1 cup chopped walnuts
- 1/2 cup roasted sunflower seeds
- 18 broccolini (heads, could use broccoli too, just need to cup up smaller for roasting time)
- olive oil (drizzle of)
- 1 pinch kosher salt (and fresh ground black pepper)
