  • 5 beets (large, cooked, peeled, chopped)
  • 1 red onion (large, finely sliced)
  • 6 sprigs thyme (plus extra, to serve)
  • 1/3 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 4 ounces fresh breadcrumbs
  • 4 ounces crumbled feta
  • 1 lemon (zested)

    Directions

    1. Preheat oven to 400°F. Lightly grease a shallow 8-cup ovenproof dish. Place beets, onion, thyme, vinegar and sugar in a roasting dish. Drizzle with oil and toss to coat. Season to taste. In a bowl, combine breadcrumbs, feta, oil and lemon zest. Season to taste. Sprinkle evenly on beet mixture. Roast 20-25 mins, until topping is golden and crisp. Sprinkle with extra thyme to serve.
