I made this today and it was delicious. I found that I did not need the extra butter because the olive oil was plenty. Great flavor, I enjoyed mixing the two beets.

Delicious! Watch your cook time with boiling and baking. I halved the time for both and that even seemed a bit too long. My beets were on the smaller size, so cook according to size. Besides that, it was a great recipe.

Great recipe but after boiling the beets for twenty minutes, they were plenty cooked. Next time I’ll do it for 5-10.

Pretty good, beets are pretty flavorful by themselves so i didn't add the butter or garlic powder (mostly because I forgot!). i like them roasted, very delish!
