- 2 spring onions (the bulb and the light green part, thinly sliced)
- 60 grams lamb's lettuce
- 40 grams walnuts (/ ⅓ of a cup of, roughly chopped)
- 80 grams goat's cheese (/ ½ a cup of hard)
- mint leaves (to garnish, optional)
- 60 mL orange juice (freshly squeezed)
- 50 mL extra-virgin olive oil
- 2 Tbsp. mint leaves (finely chopped)
- 1/2 tsp. runny honey
- 1 tsp. Dijon mustard
- 1 tsp. apple cider vinegar
- 1 pinch sea salt (and freshly cracked black pepper)
