    Awesome! Love beets and this has taught me how easy it is to make from scratch. I find it is quite a satisfying meal, highly recommended.

    LOVED IT! Didn't add that much oil and added blue cheese crumbles, corn, and a squeeze of lemon juice. Also lightly roast the onion..personal preference. Amazing recipe!
