- 4 Tbsp. unbleached all-purpose flour
- 4 cups milk (I nuked mine for 2 minutes)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 lb. pizza dough (your choice, suggestions are shown here)
- 2/3 cup sauce (white, recipe below)
- 1/2 cup beets (chopped roasted, wrap in foil with a splash of oil, roast at 400 for an hour or until tender)
- 4 oz. fresh mozzarella (torn into shreds)
- 1/2 cup crumbled gorgonzola cheese
- 1/2 cup ham (optional)
- 1/2 cup pepperoni slices (optional)
- 1/2 cup pepperoni slices (optional)
- 2 cups arugula (fresh, torn into small pieces)
- freshly ground pepper
