- 4 beets (medium, washed)
- 2 tsp. olive oil (for roasting the beets)
- 2 salt
- 2 large carrots (shaved into ribbons or grated)
- 1/2 cup low fat goat cheese (crumbled)
- 1/3 cup pumpkin seeds
- 1/3 cup chopped pecans
- 1/4 cup green onion (chopped, optional)
- 3 Tbsp. honey
- 2 Tbsp. olive oil
- 1 Tbsp. balsamic vinegar
- 1 tsp. Dijon mustard
- 2 oranges (fresh, about 1/4 cup of orange fresh orange juice)
