    Needs more than a pinch of salt and perhaps a bit more vinegar

    Great combination of flavors, but I don't like that method of cooking beets. I always skin and dice beforehand, then coat in olive oil, salt, and pepper and roast for 35-40 minutes at 400F.

    taste was fantastic. i used more lettuce and less beets and the ratios were still a bit heavy on the goodies vs lettuce. but still good
