- 1 small yellow onion (diced)
- 2 medium carrots (peeled and diced)
- 1 Granny Smith apple (peeled, cored and diced)
- 1 tsp. curry powder
- 1/2 tsp. ground turmeric
- 4 cups broth (veggie)
- 1/2 cup apple cider (do NOT use apple cider vinegar)
- 1 cup milk (use dairy free, if desired)
- 3 Tbsp. honey (depending on how sweet you like it)

- pepper
- 1/2 cup toasted pumpkin seeds (for garnish, optional)
