- 1 aubergine (medium, diced)
- 1 tsp. cumin seeds
- 1 tsp. salt
- 1 Tbsp. olive oil
- 1 onion (diced)
- 1 tsp. chilli flakes (dried, or to taste, or 1 fresh red chilli, diced)
- 3 garlic cloves (grated or crushed)
- 3 cms fresh ginger (grated)
- 2 tsp. turmeric
- 2 tsp. Garam Masala
- 200 grams red lentils
- 400 grams chopped tomatoes
- 800 mL water (i.e. 2 empty tomato tins of water)
- black pepper (to taste)
- 2 Tbsp. fresh coriander (optional)
- brown rice (or white rice, chapattis, naan breads or pilau rice)
- fresh coriander (Extra, cilantro optional)
- pickles (All your favourite, and chutneys optional)
