- 2 cups polenta (8 cups chicken stock and/or water)
- 1/2 cup asiago (soft or grated Mozzarella, etc)
- 1/2 cup Parmesan cheese (add additional to taste)
- 2 Tbsp. butter
- salt (to taste)
- pepper (to taste)
- 2 Tbsp. olive oil
- 2 Tbsp. white wine
- 1 Tbsp. balsamic vinegar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 cloves minced garlic
- 2 sprigs rosemary (minced)
- 1/4 cup chopped parsley
- 2 cups chicken stock (reduced, this should be highly reduced, and it’s best to start with 6 or more cups of regular stock, then reduce it down to 2)
- 1/2 cup red wine
- 1/2 Tbsp. balsamic vinegar
- 2 Tbsp. butter
- 1/8 tsp. lemon juice
- salt (to taste)
- pepper (to taste)
