- mushrooms (about a cup of chopped, I chopped up Portobello mushrooms)
- 10 oz. frozen spinach (defrosted and all of the excess water squeezed out)
- 1/2 cup chicken stock (or water)
- 1 1/2 Tbsp. italian seasoning (blend)
- salt
- pepper
- 1 cup mozzarella cheese (grated)
- 1 Ritz Crackers (sleeve of, lightly crushed)
- 4 Tbsp. butter (melted)
