- 8 oz. lamb (cooked, leftover from a leg, perhaps?)
- 2/3 cup arborio rice (or other rice specifically for risotto – Carnaroli or Vialone Nano)
- 1/2 cup dry white wine (4oz, 120ml)
- 2 1/4 cups chicken stock (20oz, 550ml)
- 4 green garlic
- 1 Tbsp. butter
- 1/2 cup Parmesan cheese (2oz, 60gr, – freshly grated)
