Flavor is fabulous! I reduced the portions and even with that my rice came out a little crunchy. i used about 1-1/2C rice and a whole can of chicken broth. I probably could've used another 1/3 of a can of broth with an extra 5 minutes & the rice may have softened up. The yield was about 6 servings. I definitely recommend this recipe.

Great! I was trying to find Emeril’s three cheese recipe but this closely resembled it. I just changed up the cheese and added some white wine. I like how she added the risotto though, it has been the best way to do it, yet!

delicious! i added 1/2 cup of white wine to the rice before the chicken stock. if your stock is hot it will take less time too!

Really nice risotto. I added a bit of cheddar to it since I ran out of Parmesan half way & it was still a success. I also had no onions but I don't think it made much difference leaving it out.

The texture was different than any other risotto. Would make again. But the cheese choice was not one I would have made.
