- 1/3 cup vegetable oil
- 6.75 oz. pasilla chiles (total dried, stemmed and seeded, also called chilles negros)
- 2 garlic cloves (unpeeled)
- 1 tomato (medium-large round ripe, drained canned tomatoes can be substituted -- see note)
- 1 white onion (medium, peeled, halved, and sliced 1/8 thick)
- 6 cups broth (good, preferably chicken)
- 1/2 tsp. broth (depending on saltiness of)
- 2 cups chihuahua cheese (shredded Mexican, or other melting cheese such as brick or Monterey Jack)
- 1 lime (large, cut into 6 wedges)
- 1 cup red chard (loosely packed, thinly sliced, preferably, leaves, you’ll need about 2/3 of a 12-ounce bunch)
