- 1 onion (large, finely chopped)
- 8 portobello mushrooms (medium, halved then sliced)
- 5 garlic cloves (chopped finely)

- 2 large potatoes (or equivalent, chopped into approx. 1cm dice)
- 2 cups stock (vege)
- 2 tsp. thyme (fresh minced, or 1 1/2 tsp dried)
- salt
- pepper
- 100 grams salted butter (diced)
- 1 1/2 cups wholemeal flour
- cold water (enough, or milkto bring it into a dough, start with 1/3c)
- grated cheese (to top, omit for vegans, or use vegan cheese)
