  • 100 grams clams
  • 1 shallot (finely diced)
  • 1 garlic clove (finely diced)
  • 200 grams short-grain rice
  • 4 ounces white wine
  • fish broth
  • 7 jumbo shrimp (peeled)

    Directions

    1. First, saute the clams in a saucepan until they have all opened and released their juices. Remove the clams and their juices from heat and set aside in a bowl.
    2. In the same saucepan, saute the shallot and garlic.
    3. Once softened, add the rice and stir until heated through.
    4. Add the white wine and the clam juice that has been set aside. Simmer until the alcohol has evaporated out.
    5. Add the fish broth, shrimp, and clams. Add two parts fish broth to one part rice. Simmer 12 minutes and then let the dish sit another 10 minutes before serving.
