Rice with Chicken, Wild Mushrooms and Eggplant

Description

This skillet supper is the ultimate in ease, with all the different components gradually cooked together in the same pan. First the aromatics are sauteed until tender, followed by the chicken breast pieces, which are quickly cooked until browned. Next in are wild mushrooms and chopped eggplant, and finally the rice, broth, and pinch of saffron (or turmeric), which lends the dish Middle Eastern flavor and a hint of color.

  • 1 tablespoon vegetable oil
  • 1 green bell pepper (seeded and chopped)
  • 1/2 leek (chopped)
  • 1 onion (peeled and chopped)
  • 2 boneless skinless chicken breasts (diced)
  • 200 grams wild mushrooms (cleaned and chopped)
  • 1 eggplant (chopped)
  • 240 grams rice
  • 700 milliliters chicken broth
  • saffron (or turmeric)
  • salt

    Directions

    1. Add the oil to a skillet on medium heat. Saute the pepper, the leek and the onion for 5 minutes.
    2. Add the chicken breasts and saute for 8 to 10 minutes until the chicken pieces are slightly browned.
    3. Add the mushrooms and eggplant and saute for another 5 minutes. Cover the skillet, if possible.
    4. Add the rice and saute for 5 minutes.
    5. Add the chicken broth, and a pinch each of saffron or turmeric and salt. Cook for 20 minutes and serve warm.
