  • water
  • 1 onion
  • 2 zucchinis (depending on size)
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1 tablespoon Asian spice mix
  • 5 tablespoons tomato puree
  • grated cheese

    Directions

    1. Cook the rice in salted boiling water.
    2. Chop the onion, slice the zucchini, and cut the red and yellow peppers into strips.
    3. Heat a pan; add the onion and cook until golden. Then add the zucchini and peppers. Stir with a wooden spoon. Add the Asian spice mix. Stir in the tomato puree until well combined. Drain the rice and mix it with the other ingredients in the pan.
