- 2 cans tuna (in water, drained)
- 1 stalk celery (minced)
- 4 Tbsp. onion (minced)
- 1/3 cup pickles (diced)
- 1 lemon
- 2 Tbsp. light mayonnaise
- 1 Tbsp. chile flakes (arbol, may substitute cayenne)
- salt and ground black pepper
- cooked rice

Directions
- Mix the tuna with the celery, onion, pickles, lemon juice, mayonnaise, chile flakes, salt and ground black pepper.
- Serve over the rice.

I halved this recipe to use up 1 cup of leftover cooked basmati rice and it was a perfect quick recipe. I modified it by omitting the onion, substituting 1/2 tsp of cayenne for chili flakes, and using chopped sweet gherkins as the pickles. Instead of topping the rice with the tuna, I mixed everything together, put a couple of large spoonfuls on small whole wheat wraps with some lettuce for delicious tuna and rice wraps!

Made this tonight, was delicious! Its nice to have a change of pace and the chili flakes give a nice little zip! My tuna was in water, but it didnt dry up. I'll be making this one again for sure!
