Description
Made with arborio rice, this dairy free rice pudding is rich in flavor. Combining the subtle nutty flavor of the almond milk with the more pungent flavors of cardamom and coconut, the end result is perfectly balanced. Ready in just a little over a half hour, this is a great option for a post dinner treat. Try toasting the coconut for a little crunch in your rice pudding. Many rice puddings also add raisins or other dried fruit.

- 1 cup arborio rice
- 3 cups almond milk
- 1/4 cup brown sugar
- 1/2 coffee (spoon of cardamom)
- 2 Tbsp. grated coconut

Directions
- Rinse the rice in water.
- In a saucepan, add the rice, almond milk, sugar, cardamom, and grated coconut. Bring to boil.
- Reduce the heat, cover. Stir regularly so the rice does not stick to the bottom of the saucepan.
- Cook until the milk is completely evaporated. The rice should be overcooked.
- Add some almond milk if needed.
