  • 1.4 liters semi-skimmed milk
  • 1 cinnamon stick
  • 300 grams Carolino rice
  • 8 cardamom pods
  • 75 grams sugar
  • honey (to taste)
  • 80 grams raisins
  • 50 grams sliced almonds

    Directions

    1. Place the milk and cinnamon stick in a saucepan and bring to a boil. Once boiling, add the rice and stif constantly. Simmer over low heat and continue stirring for about 30 minutes, or until cooked.
    2. In a mortar, crush the cardamom pods and remove the seeds. Add the seeds to the sugar.
    3. Add raisins, almonds, sugar and cardamom, and 2 tablespoons of honey to taste. Let boil for about 5 to 10 minutes over low heat, adding milk if it starts to dry out.
