- 8 oz. rice noodles
- 1 Tbsp. olive oil
- 6 oz. shiitake mushrooms (stems removed, wiped clean, and chopped)
- 4 cups spinach (chopped)
- 4 medium carrots (julienned)
- 1/2 cup mint leaves (chopped)
- 1/4 cup chopped cilantro
- 3 Tbsp. green onion (minced, from 2 to 3 stalks)
