- 1/3 cup liquid (refined coconut oil, plus more for oiling the pan)
- 1 cup cane sugar
- 3/4 cup brown rice flour
- 1/3 cup garbanzo (and fava bean flour)
- 1/2 cup potato starch
- 1/4 cup arrowroot
- 1 1/2 tsp. baking powder
- 1/2 tsp. xanthan gum
- 1/2 tsp. salt
- 1/8 tsp. baking soda
- 6 Tbsp. rhubarb (cooked, see above)
- 2 Tbsp. vanilla extract
- 1 vanilla bean (split and scraped)
- 1/2 cup tap water
- 1/8 cup juice (rhubarb, from the remaining cooked rhubarb)
- 1 1/3 cups confectioner's sugar
